4. Neapolitan recipe

Stuffed peppers

 

A typical Neapolitan dish perfect as an appetizer or as a side dish, known by most with the simple name of "stuffed peppers". A recipe really rich, with an irresistible taste!

Ingredients

◾ large and fleshy peppers

◾ stale chopped bread

◾eggplants

◾capers

◾ Gaeta olives

◾anchovies
◾chopped parsley

◾garlic

◾olive oil

◾salt and pepper q. b.

 

Preparation

Bake in oven peppers washed and dried on a non-stick pan, until the outer skin is not scorched. When cooked, remove the peppers from the oven, let cool, then peel them, taking care not to break them.

Dice the  eggplants and let them fry in a pan. Apart fry bread with olive oil (you only need very little), 2 cloves of garlic, crushed, pitted olives, capers and anchovies into small pieces. Just before removing the sauce from heat, add the eggplant and cook for a few moments.

Season the filling with plenty of chopped parsley, salt and pepper; remember to remove the garlic. Stuff the  peppers, close them with toothpicks and place on a greased baking dish, adding a pinch of salt and olive oil.

Put in the oven and cook for about 20 minutes at 160 °. Bake and serve!
