1. Carelian pies
Karelian (salted) pies
Ingredients:
Porridge:
- 5 dl water
- 30 g butter
- 2 dl rice for the porridge
- 12 dl milk
- 1-1,5 ts salt
Crust dough:
- rich 3 dl rye flour
- 1 dl flour
- 1 ts salt
- 30 g butter (melted or soft)
- 1,5 dl cold water
Irrigation:
- 2dl water
- 50-77g butter
- little bit of salt
Baking:
Boil to porridge water and butter. Add rises and cook with low heat and mix it little by little. Add milk gradually and let the porridge mellow cover little open mix it time to time. Add salt when the porridge is ready. If the porridge comes too thick when you are filling the pies thin it whit boiled milk.
Mix crust doughs flours and salt. Add fat and cold water, mix well (with hands). Roll dough balls floury base.
